Meat Sauce
- 3 tablespoons butter
- 1 extra-large red onion, peeled and diced (about 2 cups)
- 7–8 cloves garlic, minced
- 1 pound ground Italian sausage
- 1 pound ground beef
- 1 tablespoon dried oregano or Italian Seasoning
- 2 – 28 ounce cans tomato sauce
- 1 – 28 ounce can crushed tomato
- ½ cup chopped fresh basil
- 1–2 tablespoons sugar (optional, if needed)
- Salt and pepper, to taste
- Sauté the onions: Set a heavy-bottomed 6 quart sauce pot over medium heat. Add the butter and diced onions. Stir and soften the onions for 5-8 minutes, adjusting the heat to medium-low if they begin to brown.
- Add garlic and brown the meat: Stir in the minced garlic and sauté for an additional 2 minutes. Then add the ground Italian sausage, ground beef, and dried oregano. Cook while breaking the meat into small pieces using a wooden spoon until the meat is thoroughly browned.
- Add tomatoes and simmer: Pour in the tomato sauce and crushed tomatoes. Cover the pot and let it simmer on low to medium heat for 30 to 60 minutes, stirring occasionally. The sauce is ready after 30 minutes but can be simmered longer for deeper flavor.
