  • 1 tsp coconut oil
  • 1/4 of a Biscoff biscuit, crumbled

Instructions

  1. Prepare Overnight Oats: In a medium-sized bowl, combine rolled oats, ground flaxseed, yoghurt, vanilla extract, salt, milk, and optional maple syrup. Stir thoroughly to mix all ingredients well. Cover the bowl and refrigerate for at least 3 hours or preferably overnight to allow the oats to soak and soften.
  2. Melt Biscoff Spread: Place the Lotus Biscoff spread and coconut oil in a small bowl or ramekin. Heat in the microwave for 20 seconds, then stir until the mixture becomes smooth and runny.
  3. Assemble Layers: Take the soaked oats from the fridge. Layer the mashed fresh raspberries over the oats, then pour the melted Biscoff and coconut oil mixture evenly on top.
  4. Add Crumbled Biscuit and Set: Sprinkle crumbled Biscoff biscuit over the top as a crunchy garnish. Return the assembled oats to the fridge for a few minutes to allow the topping to set and harden slightly before serving.
