Ingredients

Scale

Vegetables

  • 1 medium butternut squash (about 2 cups cubed)
  • 4 cloves fresh garlic (minced)

Protein

  • 1 lb sirloin or ribeye steak

Herbs & Oils

  • 2 tbsp extra virgin olive oil
  • 2 sprigs fresh rosemary (chopped)
  • 2 sprigs fresh thyme (chopped)

Seasonings

  • Salt and pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the butternut squash.
  2. Prepare Squash: Peel and cube the butternut squash into bite-sized pieces. Toss the cubes with olive oil, salt, and pepper, then evenly spread them on a baking sheet.
  3. Roast Squash: Roast the squash in the oven for 25-30 minutes until the cubes turn golden brown and tender, stirring halfway through for even cooking.
  4. Season Steak: While the squash roasts, season the steak generously with salt, pepper, chopped rosemary, and thyme. Let it rest at room temperature for 15 minutes to enhance flavor penetration.
  5. Sear Steak: Heat a skillet over medium-high heat and add olive oil. Sear the steak for about 4-5 minutes per side, or until it reaches your desired doneness. Remove from heat and let it rest for several minutes to retain its juices.
  6. Assemble Bowls: Layer the roasted butternut squash at the bottom of your bowl, top with sliced steak, and finish by sprinkling minced garlic over the top for a fresh, aromatic finish.

Notes

  • Use a thermometer to check steak doneness: 130°F for medium-rare, 140°F for medium.
  • For a spicier kick, add a pinch of red pepper flakes to the squash before roasting.
  • Leftover roasted squash and steak can be stored in airtight containers in the refrigerator for up to 3 days.
