For the Pizza Dough and Base

  • ¼ cup pizza sauce of choice

  • Grated parmesan cheese, as needed

Instructions

  1. Preheat Oven and Prepare Dough: Preheat your oven to 500℉ (260℃). Allow the homemade pizza dough to sit at room temperature for 15-20 minutes to become more pliable and easier to stretch.
  2. Prepare the Skillet and Dough: Spread olive oil evenly in a 12-inch cast iron skillet. Place the room temperature dough into the oiled skillet and gently push and pull it with your hands to fit the skillet evenly. If the dough is sticky, grease your fingers with olive oil while stretching. Be patient, as cold dough tends to spring back and requires persistent working.
  3. Add Sauce and Cheese: Spread the pizza sauce (or an alternative like pesto) evenly over the dough, leaving about a 1/2-inch border around the edges. Sprinkle approximately 3/4 of the mozzarella cheese evenly over the sauce, then arrange pepperoni slices on top. Add the remaining mozzarella over the pepperoni and season with black pepper or crushed red pepper if desired.
  4. Prepare the Crust Edges: Sprinkle grated parmesan cheese over the exposed edges of the pizza crust for extra flavor and crispness.
  5. Cook on Stovetop: Place the skillet on the stovetop over medium heat. Warm the skillet and cook the pizza for about 3-5 minutes until the bottom crust has set and you see oil bubbling around the outer rim, indicating it’s ready for the oven.
  6. Bake in Oven: Transfer the hot skillet carefully to the center rack of the preheated oven. Bake the pizza for 10-12 minutes or until the cheese is fully melted and bubbly.
  7. Rest and Serve: Remove the skillet from the oven and let the pizza rest in the skillet for 3-5 minutes before unmolding. Transfer the pizza onto a cutting board and use a sharp knife or pizza wheel to slice. Optionally, garnish with additional parmesan cheese before serving.
