4.5 from 102 reviews

A luscious Cherry Amaretto Tiramisu combining the classic Italian dessert with fresh cherry flavors and a hint of amaretto liqueur. This no-bake recipe features layers of cherry-soaked ladyfingers and rich mascarpone cream, topped with cocoa or dark chocolate for an elegant and fruity twist on the traditional tiramisu.

Ingredients

Scale

Cherry Mixture

  • 1 pound fresh or frozen cherries, pitted
  • ¼ cup granulated sugar
  • ¼ cup amaretto liqueur (divided)
  • 1 cup cherry juice

Cream Mixture

  • 1 ½ cups heavy cream
  • ½ cup powdered sugar
  • 8 ounces mascarpone cheese, softened
  • 1 teaspoon vanilla extract

Assembly

  • 16 to 18 ladyfinger cookies
  • Cocoa powder or grated dark chocolate, for topping

Instructions

  1. Prepare Cherry Mixture: In a saucepan over medium heat, combine cherries, granulated sugar, and half of the amaretto liqueur. Cook for 5 to 7 minutes until the cherries soften and release their juices. Remove from heat, cool slightly, then stir in the remaining amaretto and cherry juice.
  2. Make Cream Mixture: In a large bowl, whip the heavy cream with powdered sugar until soft peaks form. In a separate bowl, blend the mascarpone cheese with vanilla extract until smooth. Gently fold the whipped cream into the mascarpone mixture until fully combined and fluffy.
  3. Soak Ladyfingers: Briefly dip each ladyfinger into the cherry-amaretto mixture, avoiding oversoaking to maintain texture. Arrange a layer of soaked ladyfingers evenly at the bottom of a 9×9-inch dish or individual serving cups.
  4. Layer the Dessert: Spread half of the mascarpone cream mixture over the ladyfingers. Spoon half of the cherry mixture on top. Repeat the layers with the remaining ladyfingers, cream, and cherry mixture.
  5. Chill: Cover and refrigerate the assembled tiramisu for at least 4 hours or overnight to allow flavors to meld and the dessert to set properly.
  6. Garnish and Serve: Before serving, dust the top with cocoa powder or sprinkle with grated dark chocolate to finish.

Notes

  • Use fresh or frozen cherries as per availability; frozen cherries should be thawed and drained slightly before cooking.
  • Do not oversoak the ladyfingers to prevent sogginess in the dessert layers.
  • The dessert benefits from resting overnight for the best flavor and texture.
  • For a non-alcoholic version, substitute amaretto with almond extract and adjust the liquid with additional cherry juice.
  • Serve chilled for a refreshing dessert experience.
