Ingredients

Scale

Chicken Kofta

  • 500 grams ground chicken
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1/4 cup fresh parsley, finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 tablespoons olive oil (for brushing grill)

Garlic Yogurt Sauce

  • 1 cup plain yogurt
  • 2 tablespoons freshly squeezed lemon juice
  • Pinch of salt

Instructions

  1. Prepare the Kofta Mixture: In a large bowl, combine ground chicken, finely chopped onion, minced garlic, parsley, ground cumin, ground coriander, salt, and black pepper. Mix thoroughly until evenly combined to ensure the flavors meld together properly.
  2. Shape the Koftas: Form the mixture into small oval-shaped koftas, about the size of a golf ball elongated slightly, which helps them cook evenly on the grill.
  3. Preheat and Prepare the Grill: Preheat your grill to medium-high heat and brush the grill grates with olive oil to prevent sticking and enhance flavor.
  4. Grill the Koftas: Place the koftas on the preheated grill and cook for approximately 10-12 minutes, turning occasionally to achieve even cooking and beautiful grill marks. Ensure they are cooked through and reach an internal temperature of 165°F (74°C).
  5. Make the Garlic Yogurt Sauce: While the koftas are grilling, in a separate bowl, stir together the plain yogurt, freshly squeezed lemon juice, and a pinch of salt. This mixture provides a creamy, tangy complement to the spiced koftas.
  6. Serve: Plate the grilled koftas and serve them with the garlic yogurt sauce on the side for dipping or drizzling, enhancing each bite with fresh and zesty flavors.

Notes

  • Ensure the koftas are tightly packed when shaping to avoid them falling apart on the grill.
  • Use fresh parsley for optimal flavor and brightness in the kofta mixture.
  • You can use a stovetop grill pan if an outdoor grill isn’t available.
  • For a spicier version, add cayenne pepper or chopped fresh chili to the kofta mixture.
  • Leftover koftas can be refrigerated for up to two days and reheated gently before serving.
