  • 110 g Light Brown Sugar
  • 180 g All-purpose Flour (plain flour)
  • ½ tsp Baking Powder
  • ½ tsp Baking Soda
  • ½ tsp Salt

Instructions

  1. Melt Butter and Mix Sugars: Melt the butter in the microwave, then pour it into a bowl with both the granulated and light brown sugars. Mix together until well combined.
  2. Prepare Espresso Paste: Add a splash of hot water to the espresso powder and stir to create a smooth paste. Add this paste to the butter and sugar mixture, stirring everything together thoroughly.
  3. Add Egg and Vanilla: Crack in the egg and add the vanilla extract, stirring until the mixture is evenly combined.
  4. Add Dry Ingredients: Gradually add the all-purpose flour, baking powder, baking soda, and salt to the wet mixture. Mix until a soft dough forms, ensuring all ingredients are incorporated.
  5. Chill Dough: Wrap or cover the dough and chill it in the refrigerator for 30 minutes to firm up, making it easier to handle and shape.
  6. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 350°F (180°C), or 160°C if fan-assisted. Line a cookie sheet with parchment paper for easy removal and cleanup.
  7. Shape Cookie Dough Balls: Scoop walnut-sized portions of dough and roll them into balls using your hands. Place the cookie dough balls on the prepared baking sheet, spacing them well apart to allow spreading during baking.
