Condensed Milk Bread Recipe : Soft & Fluffy Recipe

5 from 95 reviews

This Condensed Milk Bread recipe yields a soft and fluffy loaf with a subtly sweet flavor from sweetened condensed milk. Perfect for breakfast or afternoon tea, this bread is tender and rich with a golden crust, thanks to the egg wash. The dough is simple to make, involving basic ingredients and yeast fermentation, and then baked to perfection in the oven.

Ingredients

Scale

For the Dough

  • 3 cups all-purpose flour (or bread flour)
  • 2 ¼ teaspoons instant yeast (1 packet)
  • ½ teaspoon salt
  • ½ cup warm milk (110°F / 43°C)
  • ⅓ cup sweetened condensed milk
  • 2 tablespoons sugar
  • 1 large egg
  • 2 tablespoons butter, softened

For the Egg Wash

  • 1 egg yolk
  • 1 tablespoon milk

Instructions

  1. Activate the Yeast: In a bowl, combine warm milk, sugar, and instant yeast. Let it sit for 5 minutes until foamy, confirming the yeast is active and ready to leaven the dough.
  2. Mix the Dough: In a large bowl, mix the flour and salt. Add the activated yeast mixture, sweetened condensed milk, egg, and softened butter. Stir until the ingredients come together, then knead by hand for 8-10 minutes until the dough is smooth and elastic. Alternatively, use a stand mixer with a dough hook and knead for 5-7 minutes.
  3. First Rise: Shape the dough into a ball and place it in a greased bowl. Cover it with a cloth or plastic wrap and let it rise in a warm place for 30-45 minutes, or until doubled in size.
  4. Shape the Dough: After the dough has risen, punch it down to release air. Transfer to a floured surface, shape into a loaf, and place it in a greased loaf pan. For buns, divide the dough into 8 equal pieces, shape each into a ball, and place them spaced on a greased baking tray. Cover and let rest for 15-20 minutes for a second brief rise.
  5. Apply Egg Wash & Bake: Preheat the oven to 350°F (175°C). Brush the top of the loaf or buns with the egg wash made from egg yolk and milk. Bake for 25-30 minutes or until the bread is golden brown and sounds hollow when tapped.
  6. Cool & Serve: Remove bread from the oven and let it cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely or slightly before slicing. Enjoy warm or at room temperature for a soft, delightful treat.

Notes

  • Make sure the milk is warm, not hot, to avoid killing the yeast.
  • Use bread flour for a chewier texture or all-purpose flour for a softer crumb.
  • Do not skip the egg wash; it helps achieve a beautiful golden crust.
  • If you want sweeter buns, you can brush with honey after baking while still warm.
  • Store bread in an airtight container to keep it soft for up to 3 days.
  • For longer storage, slice and freeze the bread, then toast slices before serving.
