Ingredients

Scale

Vegetables

  • 2 cups Broccoli, chopped (Can be swapped for zucchini or bell peppers.)
  • 2 cups Cauliflower, chopped (Use frozen if fresh is unavailable, thaw and drain excess water.)

Dairy & Eggs

  • 2 cups Cottage Cheese (Greek yogurt or ricotta can substitute.)
  • 1 cup Cheddar Cheese, shredded (Feel free to replace with more cottage cheese or nutritional yeast for a dairy-free option.)
  • 3 large Eggs (Omit for a vegan variant or replace with egg substitute.)

Seasonings

  • 1 teaspoon Garlic Powder (Fresh garlic can also be used for more intensity.)
  • 1 teaspoon Onion Powder (Optional based on preference.)
  • Salt & Pepper to taste (Adjust if using pre-seasoned ingredients or cheese.)

Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C) and allow it to reach the temperature while you prepare the ingredients.
  2. Prepare baking dish: Lightly coat a baking dish with oil or cooking spray to prevent sticking and ensure easy cleanup.
  3. Mix ingredients: In a large mixing bowl, combine the chopped broccoli, cauliflower, cottage cheese, shredded cheddar cheese, garlic powder, onion powder, salt, and pepper.
  4. Add eggs: Beat the eggs separately and gently fold them into the vegetable and cheese mixture to bind all the ingredients together nicely.
  5. Fill the dish: Pour the mixture evenly into the prepared baking dish, smoothing the top with a spatula for an even bake.
  6. Bake: Place the dish in the oven and bake for about 35 minutes until the top is golden brown and the casserole is set.
  7. Cool and serve: Remove from the oven and let it cool a few minutes to firm up before slicing and serving.

Notes

  • You can swap broccoli or cauliflower for zucchini, bell peppers, or other favorite vegetables.
  • Use frozen cauliflower if fresh is not available; just be sure to thaw and drain well to avoid excess moisture.
  • For a dairy-free option, replace cheddar cheese with nutritional yeast and cottage cheese with a plant-based alternative.
  • Omit eggs or use an egg substitute to make this dish vegan.
  • Adjust salt and seasonings according to taste and the saltiness of the cheese used.
  • Let the bake rest after cooking for easier slicing and better texture.
