Dough Ingredients
- 4 1/2 tablespoons unsalted butter
- 2 tablespoons minced garlic
- 3 1/2 cups + 1 tablespoon all-purpose flour
- 3 tablespoons chopped fresh parsley
- 1 tablespoon granulated sugar
- 2 1/4 teaspoons instant yeast
- 1 teaspoon fine sea salt
- 1 cup whole or 2% milk, warmed to 110°F
- 1 large egg, room temperature
For Brushing and Topping
- 1 beaten egg (for brushing tops)
- 2 tablespoons unsalted butter
- 1 tablespoon minced garlic
- 1 tablespoon chopped fresh parsley
- Flaky sea salt (for finishing)
- Prepare Pan: Lightly butter the bottom and sides of a 9×13 pan and set it aside.
- Make Garlic Butter for Dough: In a small pot, melt the butter and add the minced garlic. Cook gently for 1-2 minutes until fragrant. Remove from heat and let cool.
- Mix Dough: In a stand mixer bowl, combine flour, parsley, sugar, yeast, and salt. Add the warmed milk, egg, and cooled garlic butter. Knead using the dough hook on low speed for 10-12 minutes until the dough is smooth, soft, and tacky. If too sticky, add flour one tablespoon at a time until workable.
- Shape Rolls: Divide dough into 12 equal portions (about 67 grams each). Shape each into a smooth ball, pinching the bottom seam tight, and place the rolls evenly spaced into the prepared baking pan.
- First Rise: Cover the dough balls with plastic wrap or a clean towel. Leave in a warm place to rise until doubled in size, approximately 1-2 hours.
- Preheat Oven: Preheat your oven to 350°F (180°C).
- Brush with Egg Wash: Gently brush the tops of the risen rolls with the beaten egg to achieve a golden crust.
- Bake Rolls: Bake the rolls for 20-30 minutes, or until the tops turn golden brown and the rolls sound hollow when tapped.
- Make Garlic Butter for Topping: While the rolls bake, melt butter in a small pot and add minced garlic. Cook for 1-2 minutes until fragrant, then remove from heat and stir in chopped parsley.
- Finish Rolls: When the rolls come out of the oven, immediately brush with the prepared garlic butter and sprinkle lightly with flaky sea salt. Serve warm.
Notes
- For best results when measuring flour, spoon it into the measuring cup and level off with a knife to avoid packing.
- The dough should feel soft and slightly tacky but not overly sticky; add flour gradually if needed.
- Using room temperature eggs and warmed milk helps activate the yeast properly.
- Flaky sea salt adds a delightful crunch and flavor contrast—don’t skip it.
- These rolls freeze well; reheat before serving for freshness.
