Ingredients

Scale

Noodles

  • 12 ounces brown rice noodles

Sauce

  • 1 tablespoon neutral oil (avocado, olive, or refined coconut oil)
  • 6 cloves garlic, minced finely
  • 1/4 to 1/3 cup low sodium soy sauce or tamari
  • 2 tablespoons vegetable broth
  • 1 1/2 tablespoons rice vinegar
  • 2 tablespoons toasted sesame oil
  • 1 tablespoon honey or maple syrup
  • 2 tablespoons tahini
  • 2 teaspoons sriracha
  • 1/2 teaspoon ground ginger

Garnish (optional)

  • Chopped scallions
  • Red pepper flakes
  • Crushed peanuts

Instructions

  1. Boil Water: Bring a large pot of water to a boil, which will be used to cook the noodles.
  2. Cook Noodles: Add the brown rice noodles to the boiling water and cook according to the package instructions until al dente. Drain and set aside.
  3. Mince Garlic: Finely mince the garlic cloves or use a garlic press to get very small pieces, ensuring the garlic evenly flavors the sauce without blending.
  4. Sauté Garlic: Heat 1 tablespoon of neutral oil in a pan over medium heat. Add the minced garlic and sauté until the edges turn golden brown and fragrant, being careful not to burn it.
  5. Whisk Sauce: In a separate bowl, whisk together the soy sauce or tamari, vegetable broth, rice vinegar, toasted sesame oil, honey or maple syrup, tahini, sriracha, and ground ginger thoroughly until the mixture is smooth and the tahini is well incorporated.
  6. Combine Sauce and Garlic: Pour the whisked sauce into the pan with the sautéed garlic and stir well to combine all the flavors.
  7. Simmer Sauce: Let the sauce simmer gently for 2-3 minutes until it thickens slightly and the flavors meld together.
  8. Toss Noodles with Sauce: Add the cooked noodles to the pan and toss thoroughly so the noodles are evenly coated with the flavorful garlic sesame sauce.
  9. Serve and Garnish: Transfer the noodles to serving bowls and garnish with chopped scallions, red pepper flakes, and crushed peanuts for extra texture and flavor. Enjoy immediately.

Notes

  • Use gluten-free tamari instead of soy sauce to keep this recipe gluten-free.
  • Brown rice noodles provide a healthier alternative to traditional wheat noodles and add a slight nuttiness.
  • Adjust the amount of sriracha based on your preferred spice level.
  • For a vegan version, substitute honey with maple syrup.
  • Toasting your own sesame oil or peanuts can add extra depth of flavor.
  • Serve immediately as noodles are best enjoyed fresh to maintain texture.
