Dry Ingredients
- 1/2 cup (50g) rolled oats
- 1/4 cup (30g) vanilla protein powder
- 1/4 cup (40g) mini dark chocolate chips
Wet Ingredients
- 1 cup (240g) almond butter
- 2 tbsp (42g) honey
- 1/4 tsp peppermint extract
- 1–2 tbsp (15-30ml) unsweetened almond milk (if needed)
- Mix Ingredients: In a large mixing bowl, combine rolled oats, almond butter, honey, vanilla protein powder, and peppermint extract. Mix thoroughly to create a consistent mixture.
- Adjust Consistency: If the mixture is too dry to hold, add unsweetened almond milk one tablespoon at a time, mixing after each addition until the desired consistency for rolling is achieved.
- Add Chocolate Chips: Gently fold in the mini dark chocolate chips evenly throughout the mixture to ensure each ball will have chocolate chips.
- Form Balls: Scoop out approximately 1 tablespoon of the mixture and roll it between your palms to form a smooth ball. Repeat the process until all mixture is used.
- Arrange on Sheet: Place the formed protein balls on a baking sheet lined with parchment paper, spacing them evenly.
- Chill: Refrigerate the balls for at least 20 minutes to allow them to firm up and hold their shape.
- Store and Serve: Store the protein balls in an airtight container in the refrigerator for up to one week. Enjoy as a healthy snack anytime!
Notes
- You can substitute almond butter with peanut butter or any other nut butter of choice.
- Use plant-based protein powder to keep the recipe vegan.
- Adjust peppermint extract amount according to taste, as it can be strong.
- If you prefer sweeter balls, add more honey incrementally.
- Feel free to roll the balls in shredded coconut or crushed nuts for added texture and flavor.
