Energy Bites Ingredients

  • 1 cup pitted Medjool dates (about 13 dates)
  • 1/4 cup sunflower seed butter (unsweetened Sunbutter preferred)
  • 1 tsp vanilla extract
  • 1/3 cup chocolate protein powder (32g)
  • 1/4 cup cocoa powder (24g)
  • 2 tsp instant coffee
  • Pinch of salt
  • Water (if dough is too dry, as needed)

Instructions

  1. Soften Dates: Place the pitted Medjool dates in a small bowl and pour hot water over them until fully submerged. Let them soak for 5-10 minutes to soften, then drain well.
  2. Blend Dates: Transfer the soaked dates to a food processor and blend them until smooth and sticky.
  3. Add Remaining Ingredients: Add sunflower seed butter, vanilla extract, chocolate protein powder, cocoa powder, instant coffee, and a pinch of salt to the food processor. Blend together, scraping down the sides a few times, until the mixture forms a large sticky dough ball. Add a little water if the dough feels too dry.
  4. Shape into Bites: Roll the dough into small balls about one tablespoon each. You should get approximately 17 energy bites.
  5. Store the Energy Bites: Place the energy bites in an airtight container or resealable bag. Store in the refrigerator or freezer to keep them fresh and firm.

Notes

  • If the dough is too dry and crumbly, add water a teaspoon at a time to help it come together.
  • Sunflower seed butter works best as a nut-free alternative, but any seed or nut butter can be used if dietary restrictions allow.
