This tangy Pickle Pasta Salad combines rotini pasta with sharp cheddar, mini dill pickles, and a creamy dill dressing made with mayonnaise and sour cream. Perfectly chilled, it’s a refreshing and flavorful side dish ideal for picnics, barbecues, or potlucks.

Ingredients

Scale

Pasta and Veggies

  • 3 cups rotini pasta (cooked and drained)
  • 1 cup mini dill pickles (sliced)
  • 1/4 cup red onion (chopped)

Cheese

  • 8 ounces sharp cheddar cheese (cubed)

Dressing

  • 1 cup mayonnaise
  • 2/3 cup sour cream
  • 1/4 cup dill pickle juice
  • 1 tablespoon fresh dill (chopped)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Cook the Pasta: Follow the package directions for cooking the rotini pasta until it is al dente. While the pasta is cooking, prepare other ingredients by cubing the cheddar cheese and slicing the mini dill pickles and chopping the red onion.
  2. Prepare Pasta Base: Drain the cooked pasta and rinse it with cold water to stop the cooking process and cool it down. Transfer the pasta to a large bowl, then add the cubed cheese, sliced pickles, and chopped red onion.
  3. Make the Dressing: In a smaller mixing bowl, combine mayonnaise, sour cream, dill pickle juice, chopped fresh dill, salt, and pepper. Whisk the ingredients thoroughly until the dressing is smooth and well blended.
  4. Toss and Chill: Pour the prepared dressing over the pasta mixture. Toss everything together gently to ensure the pasta and ingredients are evenly coated with the dressing. Cover the bowl and refrigerate the salad for at least 2 hours before serving to allow flavors to meld.

Notes

  • For best flavor, refrigerate the salad overnight.
  • Use sharp cheddar for a nice contrast to the tangy pickles.
  • You can substitute rotini pasta with other short pasta shapes like penne or fusilli.
  • Adjust salt and pepper to taste, especially if your pickle juice is particularly salty.
  • Fresh dill adds brightness, but dried dill can be used in a pinch (use about 1 teaspoon dried).
