Ingredients

Scale

Pizza Dough

  • 1 large crust recipe of pizza dough (enough to divide into 4 equal pieces)

Fillings

  • 1 cup pizza sauce
  • 8 slices mozzarella cheese (not fresh, cut into halves)
  • 4 slices provolone cheese
  • Additional pizza toppings of your choice (pepperoni, mushrooms, bell peppers, onions, olives, etc.)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (204°C) to prepare for baking the pot pies.
  2. Prepare Ramekins: Spray four 10-ounce oven-safe ramekins with baking spray on the inside and the outer sides. Place the ramekins on a baking sheet for easy handling.
  3. Layer Cheese: Place mozzarella cheese slices into each ramekin by positioning the short ends of each piece in the center of the ramekin.
  4. Add Pizza Sauce: Spoon 2 tablespoons of pizza sauce over the mozzarella cheese inside each ramekin.
  5. Add Toppings: Add your desired pizza toppings carefully into each ramekin, making sure not to overfill to leave room for crust.
  6. Extra Sauce (Optional): Add an additional 2 tablespoons of pizza sauce on top of the toppings if desired for extra flavor.
  7. Top with Provolone: Place one slice of provolone cheese over the filling in each ramekin.
  8. Prepare Dough Covers: Divide the pizza dough into four equal pieces and stretch each piece into circles approximately 1 to 1½ inches larger than the top circumference of the ramekins.
  9. Cover Fillings: Place each dough circle over the corresponding ramekin filling and gently press the dough around the outer rim of the ramekin to seal.
  10. Bake: Place the filled ramekins on the baking sheet and bake in the preheated oven at 400°F for 15 to 25 minutes, or until the dough crust turns golden brown and cooked through.
  11. Invert to Serve: Remove ramekins from oven and let cool slightly. Invert each ramekin onto a serving plate to release the pizza pot pie.
  12. Remove Ramekins: Carefully remove the ramekin from the dough. Run a knife around the dough edge if needed to loosen it, and use tongs for safe removal.

Notes

  • Use a non-fresh mozzarella cheese for better melting consistency and structure.
  • Choose toppings that will cook thoroughly within the baking time, avoiding overly watery vegetables.
  • Stretch dough carefully to make sure it covers the ramekin with some overlap for sealing.
  • Serve warm for best flavor and texture.
  • Ramekins can be replaced with other oven-safe baking dishes of similar size if needed.
