Ingredients

Scale

Tomato Mixture

  • 2 cups cherry tomatoes
  • 2 tablespoons extra virgin olive oil
  • 2 garlic cloves, minced
  • 34 sprigs of fresh thyme or rosemary
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper

Burrata and Garnish

  • 1 (4 oz) ball of burrata cheese
  • 56 fresh basil leaves, torn
  • Crushed red pepper flakes (optional, for heat)
  • Flaky sea salt (optional, for finishing)

Instructions

  1. Preheat oven: Set your oven to 400°F (200°C) allowing it to reach the perfect roasting temperature for the tomatoes.
  2. Toss ingredients: In a baking dish, combine cherry tomatoes, minced garlic, fresh thyme or rosemary, kosher salt, black pepper, and olive oil. Mix well to coat the tomatoes evenly with the herbs and seasoning.
  3. Roast tomatoes: Place the baking dish in the oven and roast the mixture for 20–25 minutes until the tomatoes are blistered, soft, and juicy, releasing their natural sweetness.
  4. Add burrata: Remove the dish from the oven briefly and nestle the whole burrata ball in the center of the roasted tomatoes. Return to the oven and bake an additional 5–7 minutes until the burrata is warmed and slightly melted.
  5. Finish and garnish: Take the dish out of the oven, scatter torn fresh basil leaves over the top, drizzle some additional extra virgin olive oil, and if desired, sprinkle crushed red pepper flakes and flaky sea salt for an extra burst of flavor and texture.
  6. Serve hot: Serve this creamy dip warm with crusty bread, pita chips, or fresh vegetables for dipping. It’s an irresistible appetizer that steals the show at any gathering.
