Instructions

  1. Prepare the filling: In a large bowl, combine the shredded chicken, softened cream cheese, diced andouille sausage or chorizo if using, finely chopped green onions, shredded cheddar cheese, hot sauce, and Cajun seasoning. Mix thoroughly to ensure all ingredients are evenly incorporated. Adjust the amount of hot sauce to your preferred spice level.
  2. Assemble the egg rolls: Lay one egg roll wrapper on a clean flat surface with one corner pointing towards you, forming a diamond shape. Spoon approximately 2 tablespoons of the prepared filling near the bottom corner. Fold the bottom corner over the filling, then fold in both side corners tightly to enclose the filling. Roll the wrapper firmly up towards the top corner and seal the edge with the beaten egg to prevent it from opening during frying.
