Wet Wet Sauce is a TikTok viral Korean-inspired chili oil sauce bursting with flavor from garlic, ginger, green onions, and gochugaru. Perfect as a condiment or dipping sauce, it can be enjoyed immediately or stored in the fridge for later use.

Ingredients

Scale

Wet Wet Sauce Ingredients

  • 3 tablespoons green onions (white part, thinly sliced)
  • 1½ teaspoons minced garlic
  • 1 teaspoon minced ginger
  • 2 tablespoons gochugaru (Korean chili flakes)
  • 1 teaspoon white sesame seeds
  • ½ cup vegetable oil
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon toasted sesame oil

Instructions

  1. Prepare Aromatics: Place the sliced green onions, minced garlic, minced ginger, gochugaru, and white sesame seeds into a large heatproof pot or heat-resistant bowl, arranging them evenly.
  2. Heat Oil: In a saucepan over medium heat, warm the vegetable oil until it becomes hot but does not start smoking. The ideal temperature is around 350°F (175°C) to properly infuse the flavors without burning.
  3. Pour Hot Oil: Carefully and slowly pour the hot vegetable oil over the aromatics in the heatproof pot. The hot oil will bubble and sizzle as it cooks the ingredients, releasing their flavors.
  4. Stir and Cool: Stir the mixture gently to combine and allow it to cool slightly for a richer, well-blended flavor profile.
  5. Add Seasonings: Stir in the soy sauce, oyster sauce, and rice vinegar thoroughly to balance the heat and add umami and acidity.
  6. Finish with Sesame Oil: Finally, mix in the toasted sesame oil for a fragrant, nutty finish.
  7. Store or Serve: Enjoy the sauce immediately as a spicy condiment, or transfer it into an airtight container and store it in the refrigerator for up to two weeks to use as needed.

Notes

  • The hot oil infusion technique releases deep flavors from the garlic, ginger, and chili flakes, making this sauce exceptionally aromatic.
  • Adjust the amount of gochugaru to control the spice level according to your taste preferences.
  • Use a heatproof container or pot to safely pour hot oil over the ingredients without cracking or damage.
  • This sauce pairs well with noodles, rice dishes, dumplings, grilled meats, or as a dipping sauce.
  • Store in the refrigerator and always use a clean spoon to avoid contamination.
